Farro (spelt wheat) with kale

Preparation:

Cook 1 cup of farro (spelt) according to package directions. Heat 2 tablespoons of olive oil in a medium saucepan over medium-high heat.

Add 1 small bunch of chopped Tuscan kale and a pinch each of salt and red pepper flakes. Cook, stirring, until the kale has reduced in volume, about 3 minutes.

Stir in the farro and 1 tablespoon olive oil, then another 1/4 cup grated Parmesan; season with salt. Drizzle with more olive oil and sprinkle with Parmesan.
