Fried okra with tomatoes

Ingredients:

  • 4 cups halved okra
  • 450 g small tomatoes (such as cherry, San Marzano), halved
  • 4 cloves garlic, crushed
  • 3 tbsp. l. olive oil
  • 1 small onion, cut into wedges
  • Salt and freshly ground pepper
  • A little apple cider vinegar for sprinkling

Preparation:

  1. In a lidded skillet, cook the garlic in olive oil over medium heat until golden brown. Add the okra and onion, season with salt and pepper, and cook until softened, 10 to 12 minutes.

    Stir in the tomatoes and cook for 3 minutes. Then add a little apple cider vinegar.
