Soba noodles with mint dressing

Ingredients:

  • 340 g dry soba noodles (Japanese buckwheat noodles)
  • 225 g cauliflower florets
  • 1/3 tbsp. rice vinegar
  • 2 tablespoons of vegetable oil
  • 1 tbsp soy sauce
  • 1 and 1/4 teaspoons sugar
  • 3/4 tsp salt
  • 1/2 cup chopped fresh mint
  • 1.5 cups thinly sliced ​​green onions (1.5 bunches)

Preparation:

  1. In a large pot of boiling water, cook the noodles until tender, about 5 minutes, then drain in a colander. Rinse with cold water to stop the cooking process and drain well.
  2. Heat a tablespoon of oil in a frying pan and fry the cauliflower. Cool.

    After the noodles have rested, prepare the dressing: combine vinegar, a tablespoon of the remaining oil, soy sauce, sugar, and salt, and stir until the sugar dissolves. Toss the noodles with the cabbage, dressing, mint, and green onions.
