Baked Potatoes with Moyo Sauce "Papas con Moyo"

Ingredients:

  • 450 g of Yukon Gold yellow-skinned potatoes
  • 1/2 onion, thinly sliced
  • 15 ml olive oil
  • 1/2 garlic, minced
  • 1/4 cup white wine
  • Juice of 6 oranges
  • 1/2 bunch chopped fresh oregano
  • 1/2 bunch chopped fresh cilantro
  • Salt and ground black pepper to taste

Preparation:

  1. Bake the potatoes in a preheated oven at 190°C (375°F). While the potatoes are baking, prepare the mojo sauce. Sauté the onion in olive oil until translucent. Add the garlic and cook for 2 minutes.

    Deglaze the pan with white wine and heat until almost all the liquid has evaporated. Add orange juice and reduce by 2/3. Add herbs, salt, and pepper. When the potatoes are done, pour hot mojo sauce over them and serve immediately.
