Ingredients:

  • 1/2 cup sugar
  • 4 tablespoons dark corn syrup
  • 1.5 tsp baking soda

Preparation:

  1. Pour sugar into a saucepan, add syrup, and stir. Once the saucepan is on the heat, do not stir.

    Place the pan on the stove and melt the mixture first, then wait until it thickens and then the boiling mixture takes on the color of maple syrup. This will take about 3 minutes.
  2. Remove the pan from the heat, add the baking soda, and watch the syrup transform into a sizzling cloud of light, airy gold. Immediately transfer the mixture to a piece of parchment or greased foil.

    Let the mixture sit until it hardens, then break it into small, sparkling pieces. Yield: 2 tbsp.
