Cuban Beef Stew "Carne con Papas" topcook.tomathouse.com
Ingredients:
- 1.1 kg beef thigh meat, cut into 2.5 cm cubes
- 4 large potatoes, peeled and cut into 2.5 cm cubes
- 1/4 cup olive oil
- 1 large white onion, diced into 1 cm cubes
- 1 tbsp. minced garlic
- 1 chopped green pepper
- 1 cup chopped canned tomatoes
- 1 tbsp paprika
- 1 tbsp. l. dried oregano
- 1 tbsp dried cilantro
- 1 tbsp. dry sherry
- Salt and white pepper
- White rice as a side dish
Preparation:
- Heat oil in a heavy skillet and sauté the onion for 5 minutes. Add the garlic, tomatoes, spices, and meat. Cook for another 5 minutes.
- Add the sherry and simmer, uncovered, for 5 minutes. Add the potatoes and enough water to cover the meat and potatoes. Cook at a low simmer until the potatoes are tender, about 25 minutes. Season with salt and pepper. Serve with white rice.
