Cuban Beef Stew "Carne con Papas"

Ingredients:

  • 1.1 kg beef thigh meat, cut into 2.5 cm cubes
  • 4 large potatoes, peeled and cut into 2.5 cm cubes
  • 1/4 cup olive oil
  • 1 large white onion, diced into 1 cm cubes
  • 1 tbsp. minced garlic
  • 1 chopped green pepper
  • 1 cup chopped canned tomatoes
  • 1 tbsp paprika
  • 1 tbsp. l. dried oregano
  • 1 tbsp dried cilantro
  • 1 tbsp. dry sherry
  • Salt and white pepper
  • White rice as a side dish

Preparation:

  1. Heat oil in a heavy skillet and sauté the onion for 5 minutes. Add the garlic, tomatoes, spices, and meat. Cook for another 5 minutes.
  2. Add the sherry and simmer, uncovered, for 5 minutes. Add the potatoes and enough water to cover the meat and potatoes. Cook at a low simmer until the potatoes are tender, about 25 minutes. Season with salt and pepper. Serve with white rice.
