Grilled chicken in a flavorful Caribbean marinade topcook.tomathouse.com
Ingredients:
- 4 chicken breasts or thighs with bones and skin
- 2 tablespoons seeded and diced jalapeño peppers
- 2 tsp grated or chopped fresh ginger
- 1 teaspoon allspice
- 1/4 cup chopped red onion
- 1/2 cup chopped green onions
- 2 tbsp. l. olive oil
- 1/4 cup fresh orange juice
- 1 tbsp. l. lime zest
- 2 tablespoons soy sauce
- 2 tablespoons chopped fresh thyme leaves
- 1 clove of garlic
- Salt and ground black pepper
- Lime wedges
Preparation:
- Puree all ingredients except the chicken in a food processor. Place the marinade and chicken in a resealable plastic bag, mix thoroughly, and marinate in the refrigerator for 4-8 hours.
- Preheat oven to 180°C.
Preheat the grill to high, remove any excess marinade from the chicken, and place it on the grill. Sear the chicken on each side for 3-4 minutes, then transfer to a baking dish and finish cooking in the oven for 15 minutes.
Squeeze a wedge of lime over each piece of chicken and serve.
