Wholemeal soda bread

topcook.tomathouse.com

Ingredients:

  • 1 cup of premium wheat flour, plus a little more for kneading
  • 3 cups whole grain flour
  • 2 teaspoons of baking soda
  • 1/2 cup oatmeal
  • 1 teaspoon coarse salt
  • 2 cups buttermilk

Preparation:

  1. Preheat oven to 220°C.

In a large bowl, combine the flour, baking soda, oats, and salt. Pour in most of the buttermilk and mix well, adding more buttermilk as needed to form a soft dough. Turn it out onto a floured surface and knead it lightly to hold its shape. Try not to over-knead.
  2. Form the dough into a round, disk-shaped loaf and score the top with a sharp knife. Place the dough on a parchment-lined baking sheet and bake for 7 minutes at 220°C (425°F). Reduce the oven temperature to 190°C (355°F) and bake for another 20-25 minutes. Remove the bread from the oven and transfer it to a cutting board. Cool slightly before slicing, and enjoy your warm bread!
