Hawaiian Coconut Dessert Haupia with Pineapple

Ingredients:

  • 1.5 cups coconut milk
  • 1/2 cup chopped fresh pineapple
  • 1.5 cups of water
  • 1/2 cup sugar
  • 3/4 cup cornstarch

Preparation:

  1. Combine cornstarch, sugar, water, and coconut milk. Stir until smooth. Place over medium heat and cook, stirring, until thickened. Reduce heat and continue cooking for another 10 minutes.

    Add fresh pineapple and pour the mixture into a flat pan. Refrigerate until the jelly sets.
