Ingredients:
Dough
- 2 cups of milk
- 2 cups of sparkling water
- 1 egg, plus 1 egg yolk
- 3 cups premium wheat flour
- 1 cup of sugar
- 1 pinch of salt
- 1/2 tbsp baking soda
- 1/2 tsp baking powder
Filling
- 1 can (680 g) pitted cherries in light syrup (drain syrup)
- 4 cups cream cheese
- 3 tbsp. sugar
- Cooking spray for frying
- Whipped cream, for serving
- Powdered sugar or chocolate powder, for serving
Preparation:
- For the test: Blend all ingredients well in a blender and refrigerate for an hour.
For the filling: Place cream cheese, sugar, and cherries in a large bowl. Mix well.
- Spray the pan with cooking spray. Pour 1/2 cup of batter into the pan and cook until the pancake is set (it should be golden, but not brown). Flip the pancake and cook the other side. Transfer to a large plate and cook the remaining pancakes in the same way.
Fill the pancakes with the creamy filling and wrap them however you like. Place them on a serving platter and serve hot with whipped cream and a sprinkle of chocolate powder.
