Simple yeast buns

Ingredients:

  • 1 cup of sour milk or kefir
  • 3 tbsp unsalted butter, plus extra for greasing the pan
  • 1 tbsp. sugar
  • 1/4 teaspoon of baking soda
  • 7 g dry yeast
  • 3.5 cups premium flour
  • 1 teaspoon of salt

Preparation:

  1. Combine the buttermilk, butter, and sugar in a saucepan and bring to a boil. Stir in the baking soda, then let cool until lukewarm. Meanwhile, pour 1/4 cup warm water into a bowl and sprinkle in the yeast; let sit for 5 minutes. Stir the yeast into the buttermilk mixture.
  2. In a large bowl, combine the flour and salt. Add the wet mixture and mix until a soft dough forms. Knead the dough in the bowl until smooth, about 2 minutes. Cover with plastic wrap and let rest for 30 minutes.
  3. Grease a 22x32 cm glass baking dish. Divide the dough into 12 rolls and form them into balls. Place the balls in the prepared dish. Cover loosely with plastic wrap and let rise in a warm place until the dough has almost doubled in size, about 1.5 hours.
  4. Preheat oven to 220°C. Bake the buns until golden brown, about 15 minutes. Serve warm.
