Sweet and Spicy Plantain Chips topcook.tomathouse.com
Ingredients:
- 3 tablespoons melted coconut oil
- Vegetable oil for frying
- 3 tbsp. l. brown sugar
- 1.5 tsp smoked paprika
- 0.5 tsp cayenne pepper
- A pinch of salt
- 3 green plantains, sliced 1cm thick.
Preparation:
- Place the coconut oil in a large skillet. Add enough vegetable oil to reach about a third of the way up the sides of the pan and heat over medium-high heat.
- Line a baking sheet with paper towels. Combine brown sugar, paprika, cayenne pepper, and salt in a small bowl and set aside.
- Add plantain slices a few at a time to the oil and fry until golden brown, about 5 minutes. Remove the plantains from the oil and crush each one with a wooden mallet or rolling pin.
- Add the plantains back into the oil, working in small batches to prevent them from sticking together, and fry for another 3 minutes. Transfer the chips to a towel-lined baking sheet and sprinkle with the spice mixture.
