Sauteed zucchini with Provencal herbs topcook.tomathouse.com
Ingredients:
- 3 tbsp. l. olive oil
- 2 medium onions, thinly sliced
- 3 large zucchinis, halved lengthwise, then thinly sliced into half-moon slices
- 1 teaspoon Provencal herbs (or a mixture of basil, oregano and marjoram)
- Special equipment: wooden spoon or spatula
Preparation:
- Heat olive oil in a large skillet over medium-high heat. Add the onion, season with salt, and cook for 2-3 minutes, stirring occasionally to prevent burning.
- Add the zucchini, herbes de Provence, salt and pepper to taste and cook for another 5 minutes, stirring with a wooden spoon or spatula.
- Reduce the heat to low, add a little more oil if necessary, and cook for 20-30 minutes, stirring occasionally. Once the dish is ready, you can turn off the heat and leave it on the stove or simply let it simmer for a little while longer at very low heat.
