Oven-baked BBQ beer wings with tangy mustard sauce

Ingredients:

    Wings

  • Vegetable oil
  • 2 kg chicken wings, cut in half (remove the tips)
  • 0.33 liters of beer
  • 1/2 cup barbecue sauce, such as Uncle Ben's
  • 2 tablespoons light brown sugar
  • 2 tablespoons chipotle hot sauce

    Dip sauce

  • 0.5 cup mayonnaise
  • 3 tablespoons Dijon mustard
  • Zest and juice of 1 lemon
  • Half a clove of garlic, finely grated

Preparation:

  1. Dip sauce:

    In a bowl, combine mayonnaise, mustard, lemon zest and juice, garlic, and 0.5 teaspoon salt. Refrigerate until ready to serve.
  2. Preheat oven to 220°C. Generously grease 2 rimmed baking sheets.
  3. Wings:

    In a large bowl, toss the wings with 2 teaspoons of salt and a few grinds of black pepper. Arrange them in a single layer on the prepared baking sheets. Bake until very crisp, about 55 minutes.
  4. Meanwhile, combine the beer, barbecue sauce, brown sugar, and hot sauce in a small saucepan and bring to a boil over medium-high heat. Reduce the heat slightly and simmer until the sauce becomes syrupy and coats the back of a spoon, about 20 minutes.
  5. Transfer the baked wings to a clean large bowl and drizzle with the beer glaze. Serve with dipping sauce.
