Ingredients:

  • 1 cup cooled leftover white or brown rice
  • 450 g of ground turkey
  • 1 can (425 g) pinto beans, rinsed
  • A pinch of chili powder
  • 1.5 tsp cumin
  • 1.5 tsp. coriander
  • 1 tbsp grill seasoning
  • 1 tbsp. l. rapeseed oil (canola)
  • 1 ripe avocado
  • 1 clove garlic, minced
  • Zest and juice of 1 lime
  • 1 jalapeño or serrano pepper, seeded and finely chopped
  • Half a small red onion, finely chopped
  • 0.5 cup sour cream
  • 4 red lettuce leaves
  • 1 ripe tomato, sliced ​​into rounds
  • 4 buns, cut in half on the sides

Preparation:

  1. Combine rice, ground beef, and beans with spices and grill seasoning. Form into 4 large patties, then heat 1 tablespoon of oil in a large skillet over medium-high heat. Fry the patties for 7-8 minutes on each side.
  2. Meanwhile, combine the avocado with the garlic, lime zest and juice, jalapeño, and red onion. Mash to combine, then add the sour cream.
  3. Place the patties on buns along with lettuce and tomatoes, and top with guacamole and sour cream.
