Sticky Soy Glazed Salmon with Broccolini and Lime Rice topcook.tomathouse.com
Ingredients:
Lime rice
- 1 cup jasmine rice
- Zest of 1 lime
Salmon
- 1 tbsp. vegetable oil
- 4 skinless salmon fillets, weighing 180 g each, patted dry
- 1/3 cup honey
- 1/3 cup soy sauce
- 1 tbsp. l. rice vinegar
- 1 teaspoon finely grated ginger
- 2 cloves garlic, grated
- Juice of 1 lime and half a lime, cut into thin half-moon slices
- Coriander leaves, for serving
Broccolini
- 1 bunch broccolini, wash, stems cut to 8 cm.
Preparation:
- Lime rice:
Cook rice according to package directions and keep warm.
- Salmon:
Heat a large skillet over medium-high heat. Add vegetable oil and heat until shimmering. Add the fish, flesh side down, and fry until golden brown, about 3 minutes.
- Sticky soy glaze:
Combine honey, soy sauce, vinegar, ginger, garlic, and lime juice in a bowl. Turn the fish over and pour the soy mixture into the bottom of the pan. Bring the soy mixture to a boil and spoon it over the salmon while it cooks until done, 5-7 minutes.
- Meanwhile, bring a pot of water with a steamer basket to a boil over high heat. Add the broccoli, cover, and steam until crisp-tender, 4 to 5 minutes.
- Transfer the fish to a plate. Add the lime wedges to the pan and simmer over low heat until the glaze becomes very sticky, about 3 more minutes.
- Add lime zest to the rice and toss. Transfer to a serving platter. Arrange the broccolini on top of the rice, add the fish, glaze, and lime wedges, then sprinkle with cilantro.
