Ingredients:
- 2 cups premium flour
- 3 tablespoons of sugar
- 2 tsp baking powder
- 1 teaspoon apple pie spice mix
- 1/4 teaspoon fine salt
- 1 and 3/4 cups of sour milk or kefir at room temperature
- 2 large eggs
- 4 tbsp unsalted butter, melted slightly and let cool, plus extra for waffle iron
- 1 tsp vanilla extract
- 1 very ripe banana, mashed
- Warmed honey, sliced bananas and chopped peanuts for serving
Preparation:
- In a large bowl, combine the flour, sugar, baking powder, apple pie spice, and salt. In a medium bowl, whisk the buttermilk and eggs until smooth, then add the melted butter, vanilla, and mashed bananas. Pour the buttermilk mixture into the flour mixture and knead into a dough. Let sit for 10 minutes.
- Preheat oven to 95°C. Heat the waffle iron. Lightly grease the top and bottom of the waffle iron with butter.
- Fill each waffle well about three-quarters full with batter. Carefully close the lid and cook until the waffles are golden brown and crispy, 5–7 minutes. Transfer the finished waffles to the oven to keep warm and repeat with the remaining batter, greasing the waffle iron with butter.
- Serve the waffles drizzled with warm honey and sprinkled with banana slices and chopped peanuts.
