Ingredients:
Refueling
- 3 tablespoons balsamic vinegar
- 1 teaspoon chopped fresh oregano
- 0.5 tsp honey
- 0.5 tsp coarse salt
- 1/4 tsp freshly ground black pepper
- 1/4 cup extra-virgin olive oil
Salad
- 2 Bull's Heart tomatoes (or large heirloom tomatoes), sliced into 1cm thick rounds.
- 1 small red onion, diced
- 1 cup crumbled feta
- 2 tablespoons fresh mint leaves
- 1 tbsp fresh parsley leaves
- 8 fresh basil leaves, torn
Preparation:
- In a small bowl, combine balsamic vinegar, oregano, honey, salt, and black pepper. Gradually whisk in the olive oil until smooth.
- Place the sliced tomatoes on a platter. Sprinkle with onions and feta. Drizzle with dressing and sprinkle with herbs.
