Ingredients:
- 6 tablespoons extra-virgin olive oil + extra for drizzling
- 5 cloves garlic, finely chopped
- 2 tbsp. brandy
- 0.5 cups dry white wine
- 1 cup chopped fresh parsley
- 18 large shrimp, peeled and deveined, do not remove tails
- Warm baguette slices, for serving
Preparation:
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the garlic and cook until slightly softened, about 1 minute. Add the brandy and swirl the pan until the alcohol evaporates.
- Add the wine and 1/4 cup water and cook, reducing the heat slightly, for 3-4 minutes. Add the parsley, 0.5 teaspoon salt, and pepper to taste. Transfer the mixture to a blender with 2 tablespoons olive oil and blend until smooth. Cover and set aside.
- When you are ready to serveHeat the remaining 2 tablespoons of oil in a skillet over high heat. Add the shrimp and cook until pink, 1-2 minutes. Add the green sauce, season with salt and pepper, and heat through. If the sauce is too thick, add a little water. Serve with bread.
