Ingredients:
- 900 g green beans, trimmed and halved
- 3 tablespoons extra-virgin olive oil
- 1 large onion, thinly sliced
- 200 g smoked ham, cut into 1 cm cubes.
- 3 tablespoons of apple cider vinegar
- 0.5 cup chopped fresh parsley
Preparation:
- Bring a large pot of water to a boil and add salt. Add the green beans and cook until crisp-tender, about 7 minutes. Drain, rinse under cold water, and pat dry with paper towels; set aside. Refrigerate the beans, covered, for up to 4 hours.
- Heat the olive oil in a large saucepan or Dutch oven over medium-high heat. Add the onion, season with salt, and cook, stirring occasionally, until softened and golden, about 8 minutes. Add the ham and continue cooking until heated through, about 2 minutes. Stir in the vinegar and remove from heat.
- Add the green beans to the pan and stir to heat through. Add the parsley and season with salt and pepper to taste.
