Honey Bourbon Cake

Ingredients:

  • 1 cup vegetable oil + extra to grease the pan
  • 3 and 3/4 cups all-purpose flour, to grease the pan
  • 1.5 cups granulated sugar
  • 1 tbsp. honey
  • 0.5 cup light brown sugar
  • 3 very large eggs at room temperature
  • 2 tsp. grated orange zest (2 oranges)
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • 1 teaspoon of baking soda
  • 4 tsp ground cinnamon
  • 1 teaspoon coarse salt
  • 0.5 tsp ground cloves
  • 0.5 tsp ground allspice
  • 0.5 tsp ground ginger
  • 1 cup hot coffee
  • 0.5 cup freshly squeezed orange juice (2 oranges)
  • 1/4 cup quality bourbon, such as Maker's Mark
  • 0.5 cups blanched sliced ​​almonds
  • Whipped cream for serving

Preparation:

  1. Preheat oven to 350°F (175°C). Grease a fixed-bottom angel food cake pan, line the bottom with parchment paper, then grease and flour the pan.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, granulated sugar, honey, brown sugar, eggs, orange zest, and vanilla on medium speed for 1 minute. In another bowl, sift together the flour, baking powder, baking soda, cinnamon, salt, cloves, allspice, and ginger and mix. Combine the coffee, orange juice, and bourbon in a 2-cup measuring cup. With the mixer speed reduced to low, add the flour and liquid mixtures alternately to the butter-sugar mixture, one third at a time, beginning and ending with the flour, until smooth. The batter will be very runny!
  3. Pour the batter into the prepared pan. Tap the pan 5 times on the counter to remove any air bubbles. Sprinkle with almonds. Bake in the center of the oven for 40–45 minutes, until a toothpick inserted into the center of the cake comes out clean. Let cool completely, then remove from the pan and place the cake, almond-side up, on a flat serving plate. Serve at room temperature.
