Ingredients:
- 4 large carrots
- 1-2 cloves of garlic
- Orange juice and grated zest
- 2-3 tablespoons chopped green parsley
- Salt, black pepper
- A spoonful of crushed peanuts
- 3 tablespoons peanut butter
Preparation:
- Grind the crushed garlic with salt, pepper, orange juice, zest and peanut butter.
- Coarsely grate the peeled carrots and mix with half the parsley. Drizzle with the prepared dressing and stir. Sprinkle with herbs and nuts before serving.
