Hot sandwiches with tomatoes and cheese

Ingredients:

  • 1 large or 2 medium tomatoes of non-hybrid varieties, such as 'Bull's Heart'
  • 8 slices of bread, about 1 cm thick.
  • 12 slices sharp cheddar or American cheese
  • 6 tbsp. cultured butter, softened

Preparation:

  1. Slice the tomatoes into thin slices and place them on a paper towel. Sprinkle with salt and let them sit to release excess water, about 15 minutes. Pat dry with paper towels.
  2. Place 4 slices of bread on a work surface. Top each with 2 slices of cheese, covering the bread to the edges. Then add 2 slices of tomato and 1 more slice of cheese. Top the sandwiches with the remaining bread. Evenly spread both sides of the sandwiches with a thin layer of butter (about 1.5 tablespoons butter for each sandwich).
  3. Place 2 sandwiches in a medium nonstick skillet and heat over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden, about 2 minutes. Flip, cover again, and cook until the other side is deep golden brown and the cheese is melted, about 2 more minutes. Repeat with the remaining sandwiches.
