Oven-baked barbecue chicken topcook.tomathouse.com
Ingredients:
- 2 large boneless, skinless chicken breast halves
- 8 tbsp. water + 2 tbsp.
- 3/4 cup coarse salt + 1 tsp.
- 3/4 cup light brown sugar + 1 tbsp.
- 3/4 cup white vinegar
- 1 tbsp BBQ seasoning + 2 tbsp
Preparation:
- In a large plastic container with a lid, combine 8 cups of water, 3/4 cup of salt, 3/4 cup of brown sugar, vinegar, and 1 tablespoon of barbecue seasoning. Stir until smooth. Place the chicken in the brine and refrigerate for at least 2 hours, but no more than 4 hours.
- Preheat oven to 175°C.
- Remove the chicken from the brine and pat dry. In a small bowl, combine 1 teaspoon of salt, 1 tablespoon of brown sugar, and 2 tablespoons of barbecue seasoning. Rub the outside of the chicken with the spice mixture and transfer to a baking dish. Pour 2 tablespoons of water into the bottom of the dish and place in the oven.
- Bake for 45 minutes or until the internal temperature in the thickest part of the chicken reaches 160°F (71°C). Remove the chicken from the oven and place it on a cutting board. Let it rest for 5 minutes, loosely covered with foil, then slice and place on a serving platter. Enjoy!
