Salad with gnocchi and pesto

Ingredients:

  • 450 g fresh gnocchi
  • 1 cup chopped green beans (trim and cut into thirds each)
  • 1 cup frozen green peas
  • 200 g pesto
  • 2 tablespoons mayonnaise
  • 2 tbsp grated Parmesan cheese + extra for serving, if desired

Preparation:

  1. Bring a large saucepan of water to a boil and season generously with salt. Add the gnocchi and cook for 1 minute less than the package directions, or until they begin to float to the surface. Transfer them to a colander with a slotted spoon.
  2. Return the pan to the heat and bring the water to a boil. Add the green beans and peas and cook until tender, 2–3 minutes. Drain and let the vegetables cool.
  3. Combine the pesto and mayonnaise in a large bowl. Add the Parmesan and cooled vegetables. Season with salt and pepper. Gently fold in the gnocchi. Sprinkle with more Parmesan, if desired.
