Sweet and spicy nut mix with dried cranberries

Ingredients:

    Spice mix

  • 3 tablespoons of sugar
  • 1.5 tsp paprika
  • 1.5 tsp chopped fresh thyme
  • 3/4 tsp ground mustard
  • 1/4 tsp ground cinnamon

    Nuts

  • Vegetable oil to grease the pan
  • Protein of 1 large egg
  • 1 cup unsalted raw cashews
  • 1 cup unsalted raw peanuts
  • 1 cup unsalted raw pecans
  • 1 cup unsalted raw walnuts
  • 1 cup dried cranberries

Preparation:

  1. Preheat oven to 175°C, lightly grease a baking sheet with vegetable oil.
  2. In a small bowl, combine the sugar, paprika, thyme, mustard, cinnamon, 1.5 teaspoons of salt, and 1/4 teaspoon of black pepper and set aside. Place the egg white in a large bowl and whisk until foamy. Add the cashews, peanuts, pecans, and walnuts and stir to coat. Add the spice mixture and stir again to coat.
  3. Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15-20 minutes. Let cool on the baking sheet, then stir in the cranberries and transfer to a large bowl.
