Smoked Brie cheese

Ingredients:

  • 1 small head of Brie or Camembert cheese
  • 2 fresh bay leaves or 2 sprigs of thyme
  • Extra virgin olive oil for greasing
  • 2 cups hickory, cherry, or apple wood chips
  • 1 large piece of gauze
  • Kitchen twine
  • 1 22cm disposable round pie pan
  • Soak wood chips in water for 1 hour, then prepare the grill for smoking.

Preparation:

  1. Place cheesecloth on a work surface and brush with olive oil. Place the cheese in the center of the cheesecloth and top with a bay leaf. Wrap the cheese tightly in the cheesecloth and tie with kitchen twine. Place it in a disposable baking dish, bay leaf side up.
  2. Once the grill reaches 120 degrees Celsius (250 degrees Fahrenheit), place the pan on the cooler side. Cover and let it smoke for 20 minutes, until golden brown. If you're using a gas grill, turn off the flame and let the cheese sit, covered, for another 10 minutes (this will infuse more flavor). If using a charcoal grill, this step is optional. Remove the cheese from the grill and unwrap it.
