Natural Slow Cooker Pork Cutlets

Ingredients:

  • 4 natural boneless pork cutlets, approximately 2.5 cm thick.
  • 3 tbsp. flour
  • 1/4 cup grainy mustard
  • 2 tablespoons of honey
  • 1 small shallot
  • 1 large Pink Lady or Fuji apple
  • Corn porridge or rice seasoned with butter, for serving

Preparation:

  1. Place the pork chops on a rimmed baking sheet and season both sides with salt and pepper. Sprinkle flour on a small plate. Dredge the chops in the flour and return them to the baking sheet to come to room temperature while you prepare the remaining ingredients.
  2. In a 4-6 quart slow cooker, combine the mustard, honey, and 1 tablespoon of water. Slice the shallots into rings and add to the pot, separating the rings. Cut into 1 cm pieces (remove the core) and add to the pot along with 1/4 teaspoon of salt. Stir. Spread the mixture into an even layer and arrange the pork chops on top, overlapping them if necessary.
  3. Cover and cook over low heat until the pork is cooked through, about 3 hours. Transfer the patties to a large plate and top with warm apples and sauce. Serve with cornmeal or rice.
