Cake parfait with dried fruits

Ingredients:

  • 1 dried fruit muffin (about 600 g)
  • 2 cups frozen blueberries, thawed
  • 4 cups plain yogurt

Preparation:

  1. Make granola from a muffin:

    Preheat the oven to 135°C (275°F). Crumble the cake into pea-sized pieces. Chop any larger pieces of dried fruit or nuts with a knife. Arrange the pieces on a baking sheet and bake until golden brown and the crumbs are just dried, 35-55 minutes, depending on the cake type. Let cool completely. Leftover granola can be stored in a tightly sealed container for up to 1 week..
  2. Make a parfait:

    Heat the blueberries in a small saucepan over medium heat for about 5 minutes. Strain the juice into another container and remove the berries. Return the juice to the saucepan and simmer until reduced by half, about 4 minutes. Let cool completely.
  3. Divide the blueberry sauce evenly among 4 tall parfait glasses. Add 1 cup of yogurt and gently stir. Sprinkle the parfait with the granola from the muffin and garnish with blueberries.
