Ingredients:
- 1/4 cup sherry vinegar
- 2 tbsp. l. chopped shallots
- 3/4 cup extra-virgin olive oil
Preparation:
- In a small bowl, combine the vinegar, shallots, and a generous pinch of salt. Gradually whisk in the olive oil, starting with a few drops, then add the rest in a steady stream to create a smooth, slightly thick dressing. Add freshly ground black pepper (a couple of turns of the grinder).
