Hot sandwich with smoked gouda and roasted sweet peppers

Ingredients:

  • 8 square slices of white bread, about 1 cm thick.
  • 110 g very thin slices of smoked Gouda
  • 4 slices Muenster (about 110 g)
  • 1 medium roasted sweet pepper, patted dry and thinly sliced
  • 2 cups fine arugula
  • 6 tbsp unsalted butter, softened

Preparation:

  1. Place 4 slices of bread on a work surface. Top each with a small amount of smoked Gouda, 1 slice of Muenster, a thin layer of sliced ​​roasted peppers (about 50g), 15g of fresh arugula, and another layer of smoked Gouda. Top the sandwiches with the remaining bread.
  2. Lightly and evenly butter both sides, using about 1.5 tablespoons butter for each sandwich.
  3. Place 2 sandwiches in a medium nonstick skillet and heat over medium heat. Cover the skillet and cook until the bread is evenly browned, about 2 minutes.
  4. Flip, cover again, and cook until the top is deep golden brown and the cheese is visibly melted, about 2 more minutes. Repeat with the remaining sandwiches.
