Healthy Spaghetti with Creamy Tomato Sauce in One Skillet

Ingredients:

  • 250g whole grain spaghetti, broken in half
  • 3 tablespoons extra-virgin olive oil
  • 1 tbsp tomato paste
  • 4 cloves garlic, thinly sliced
  • 2 medium tomatoes, cut into pieces
  • A handful of fresh basil leaves, plus extra for serving
  • A large pinch of crushed red pepper flakes
  • 0.5 cup grated Parmesan + extra for serving
  • 60 g low-calorie cream cheese, cut into small pieces

Preparation:

  1. Place spaghetti, olive oil, tomato paste, garlic, tomatoes, basil, red pepper flakes and 1 teaspoon salt in a medium skillet with high sides.
  2. Add 5 cups of water and bring to a boil over medium-high heat. Continue cooking, stirring frequently to prevent the spaghetti from sticking, until al dente and the sauce has thickened, 6-8 minutes. Stir in the Parmesan and cream cheese (the sauce will thicken further), and season with salt to taste, if needed. Sprinkle with Parmesan and basil.
