Ingredients:
Pie
- 165g (12 tbsp) unsalted butter, room temperature, plus extra for greasing the pan
- 2.5 cups premium flour
- 1 teaspoon baking powder
- 0.5 tsp of soda
- 1.5 cups firmly packed light brown sugar
- 2/3 cup creamy peanut butter
- 4 large eggs
- 1 teaspoon pure vanilla extract
- 3/4 tsp fine salt
- 3/4 cup milk
- 3/4 cup raspberry, strawberry or grape jam
Streusel
- 3/4 cup premium flour
- 2/3 cup firmly packed light brown sugar
- 2/3 cup coarsely chopped honey-glazed peanuts
- 1/4 teaspoon fine salt
- 4 tbsp unsalted butter, softened
- Powdered sugar, for serving
Preparation:
- Position the oven rack in the middle position and preheat the oven to 350°F (175°C). Grease a 9 x 13-inch baking dish.
- Pie:
In a large bowl, combine the flour, baking powder, salt, and baking soda. In another large bowl, beat the brown sugar, butter, and peanut butter with a mixer on medium-high speed until the mixture is light and smooth, about 5 minutes. Scrape down the sides of the bowl as needed. Add the eggs, one at a time, beating well after each addition. Continue beating until smooth, about 2 minutes. Add the vanilla extract.
- Reduce mixer speed to medium-low and add flour in three additions, alternating with two additions of milk, beginning and ending with flour. Knead until smooth.
- Place the dough into the prepared baking pan. Spoon the jam on top and stir with the back of a spoon.
- Streusel:
Combine flour, brown sugar, peanuts, and salt in a small bowl. Add the butter and mix thoroughly with your fingers or a fork until evenly distributed and incorporated into the flour mixture. Sprinkle the dough with streusel.
- Bake until golden brown and a toothpick inserted into the center comes out clean, 50-60 minutes. Cool in the pan on a wire rack. Dust with powdered sugar, slice, and serve.
