Spelt salad with pear and celery topcook.tomathouse.com
Ingredients:
- 1 cup spelt
- 2 pears
- 2 stalks of celery
- 0.5 cup parsley
- 0.5 tbsp. grated parmesan
- 3 tablespoons of apple cider vinegar
Preparation:
- Cook 1 cup of spelt according to package directions. Drain thoroughly and transfer to a large bowl to cool.
- Toss with 2 sliced pears, 2 thinly sliced celery stalks, 1/2 cup each of parsley and grated Parmesan, 3 tablespoons each of olive oil and apple cider vinegar. Season with salt and pepper to taste.
