Warm Vinaigrette with Bacon and Shallots

Ingredients:

  • 4 slices smoked bacon, cut into 0.3cm thick strips.
  • 0.5 cup finely chopped shallots
  • 1/3 cup sherry vinegar
  • 2 tbsp. grainy mustard
  • 0.5 cups extra-virgin olive oil
  • 1 tbsp chopped fresh tarragon
  • 6 tbsp. dandelion leaves
  • 0.5 cup crumbled goat cheese

Preparation:

  1. Place the bacon in a small saucepan over medium heat and cook, stirring frequently to prevent burning, until the fat begins to render. Add the shallots and cook until softened, about 3 minutes.
  2. Remove the saucepan from the heat and stir in the sherry vinegar and mustard, then add the olive oil and tarragon. Season with salt and pepper to taste.
  3. Pour the vinaigrette over the greens in a bowl and toss. Add the goat cheese and toss again. Serve immediately.
