Chicken drumsticks in apple glaze

Ingredients:

  • 12 chicken drumsticks with skin
  • Coarse salt, freshly ground black pepper
  • 2 cups unfiltered apple juice
  • 1/2 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 2 teaspoons of honey
  • Grated zest of 1 lemon
  • 1/5 tsp dried red onion flakes pepper
  • 2 tsp sesame seeds (optional)
  • 1 tbsp (15 g) unsalted butter

Preparation:

  1. Preheat the oven to 230°C (430°F). Place a rack on a baking sheet. Season the chicken drumsticks with salt and pepper, place them on the rack, and bake for 30 minutes. Turn them over and continue baking until golden brown and crispy, about 30 more minutes.
  2. Meanwhile, prepare the apple-honey sauce: combine the apple juice, vinegar, soy sauce, honey, lemon zest, pepper flakes, and salt to taste in a small saucepan and bring to a boil. Simmer until the sauce thickens, about 20-25 minutes. Add the sesame seeds toward the end of cooking.
  3. Place the chicken drumsticks in a saucepan with the apple sauce, add the butter, and stir. Transfer the drumsticks to a serving dish.

    Serve chicken drumsticks in honey sauce with a fresh vegetable salad.
