Tex-Mex-Style Turkey Burgers topcook.tomathouse.com
Ingredients:
- 1 medium zucchini
- 2 green onions, finely chopped
- 450 g of ground turkey (6% fat)
- 1 large egg, beaten
- 1 tsp chili powder
- 0.5 tsp salt
- 2 tbsp. l. rapeseed oil (canola)
- 4 slices Monterey Jack cheese
- 4 burger buns, cut in half and toasted
- 1 cup salsa with vegetable pieces
Preparation:
- Place a grater on two layers of paper towels. Grate the zucchini using the coarse side of a grater. Wrap in the paper towels and squeeze out as much liquid as possible. Transfer to a large bowl and mix with the green onions, ground turkey, egg, chili powder, and salt until smooth. Form into 4 patties the same diameter as your buns.
- Heat oil in a large skillet over medium heat. Add the patties and cook until browned on the bottom, about 7 minutes. Carefully flip and cook until cooked through, about 8 minutes. Top each patty with a slice of cheese, then slide them onto the bottom halves of the buns. Top with salsa and cover with the top halves of the buns.
