Gin and tonic with hibiscus topcook.tomathouse.com
Ingredients:
- 0.5 cups dried hibiscus flowers
- 0.5 cups of sugar
- 3/4 cup gin
- 1/4 cup freshly squeezed lemon juice (1-2 lemons)
- 1.5 cups tonic
Preparation:
- Combine the hibiscus flowers, sugar, and 1/2 cup water in a small saucepan and bring to a boil. Reduce heat to medium and simmer, stirring, until the sugar dissolves, about 2 minutes. Pour the syrup into a small bowl and refrigerate for at least 1 hour or overnight.
- Strain the syrup into a measuring cup, reserving some of the flowers for garnishing cocktails. Combine gin, lemon juice, and 1/4 cup hibiscus syrup in a small pitcher. Add tonic water. Add more syrup to taste.
- Fill 4 glasses with ice. Pour the cocktail and garnish with hibiscus flowers.
