Ingredients:
- 3 tablespoons lime juice (about 4 limes)
- 1 tbsp fish sauce
- 1 tbsp + 1 tsp soy sauce
- 2 tsp light brown sugar
- 1/3 cup fresh coriander leaves, coarsely chopped, plus extra for serving
- 3 green onions, thinly sliced
- 1 small red jalapeño or Fresno, thinly sliced
- 0.5 cups lightly salted chicken broth
- 450 g of ground beef or chicken
- 1 tbsp. grated ginger
- 2 cloves garlic, crushed
- 1 large head Bibb or romaine lettuce, 15 large leaves removed
- Chopped roasted peanuts, for serving
- Grated carrots, for serving
Preparation:
- In a large bowl, whisk together the lime juice, fish sauce, 1 tablespoon soy sauce, and brown sugar until the sugar dissolves. Add the cilantro, green onions, and chili pepper; set aside.
- Heat the chicken broth in a large skillet over medium heat until steaming but not boiling. Add the ground pork and the remaining 1 teaspoon soy sauce and cook, breaking up the ground pork with a spoon (not too finely), until the meat is just cooked through and no longer pink, about 6 minutes.
- Add the ginger and garlic and remove from heat. Stir the meat mixture into the lime mixture until well coated. Let it simmer for at least 15 minutes until the flavors meld.
- To assemble, spoon 1-2 tablespoons of the meat filling into the center of each lettuce leaf. Top with chopped peanuts, grated carrots, and finely chopped cilantro. Strain any remaining liquid from the filling and serve as a dipping sauce.
