Ingredients:
- 450 g of bow-shaped pasta (farfalle)
- 6 tablespoons unsalted butter, cut into pieces
- Freshly grated nutmeg
- Freshly grated parmesan
Preparation:
- In a large saucepan, bring water to a boil over high heat and season generously with salt. Add the pasta and cook, stirring occasionally, until al dente, about 12 minutes. Drain the pasta in a colander, reserving 3-4 tablespoons of the cooking water in the bottom of the pan.
- Return the pan to low heat. Whisk in the butter, one piece at a time, waiting for it to melt before adding the next, to create a creamy sauce. Add the pasta to the sauce. Season with salt and pepper to taste and sprinkle with nutmeg, if desired. Add a little warm water if the pasta is shiny. Divide the pasta among warm plates and serve hot, sprinkling each serving with Parmesan cheese, if desired.
