Walnut pesto

Ingredients:

  • 2 cups walnuts
  • 2 cloves of garlic
  • 0.5 cup + 2 tablespoons extra-virgin olive oil
  • 2 tbsp sherry vinegar
  • 0.5 cup finely chopped fresh parsley
  • 1 tbsp chopped fresh thyme

Preparation:

  1. Preheat oven to 200°C. Spread the walnuts in an even layer on a baking sheet and toast until golden brown, about 5 minutes. Let cool completely.
  2. In a food processor, pulse 1 cup walnuts, garlic, and 1/4 cup olive oil until smooth, about 1 minute, scraping down the sides of the bowl as needed.
  3. Add the remaining 1 cup walnuts and 1/4 cup plus 2 tablespoons olive oil, vinegar, and a pinch of salt. Process until a chunky paste forms.
  4. Transfer to a bowl and mix the pesto with parsley and thyme, season with salt to taste.
