Ingredients:
- 1 cup self-raising flour
- 3/4 cup ricotta
- 2 eggs
- 1/4 tsp mint extract
Preparation:
- Topping and dough:
In a resealable plastic bag, combine 1/4 cup sugar with 1/2 teaspoon peppermint extract and stir to coat evenly; pour onto a baking sheet and let dry, 1 hour.
- In a medium bowl, combine peppermint sugar with 3 tablespoons red sugar. In a separate bowl, combine 2 eggs, 3/4 cup ricotta, 3 tablespoons sugar, and 1/4 teaspoon peppermint extract. Stir in 1 cup self-rising flour.
- Frying:
Heat vegetable oil in a large cauldron to 175°C. Fry 1 heaping tablespoon of batter a few at a time, turning, until golden brown, about 4 minutes. Using a slotted spoon, transfer the balls to a paper towel-lined plate and let them sit for 10 seconds to drain off excess oil.
- Then roll the donuts in mint sugar and serve.
