Ingredients:
- 900 g asparagus
- 1/4 cup breadcrumbs
- 1 tbsp chopped thyme
Preparation:
- In a 3-quart baking dish, toss 900 g of asparagus with 1 tbsp of olive oil and a pinch of salt and black pepper.
- Bake in the oven at 425°F (220°C) until the asparagus is crisp-tender, 10 to 12 minutes. Combine 1/4 cup whole-wheat breadcrumbs with 2 tablespoons grated Pecorino cheese, 1 tablespoon chopped thyme, and 1 tablespoon melted butter.
- Sprinkle the asparagus with the topping. Grill in the oven until the breadcrumbs are golden brown, 2-4 minutes.
