Ingredients:
- 1 cup quinoa
- 1 cup grape tomatoes
- 1 can (425 g) canned hearts of palm
- 2 green onions
Preparation:
- Cook 1 cup of quinoa according to package directions. Stir to cool slightly.
- Combine 1 cup halved grape tomatoes, 1 1/4 lb can (425 g) rinsed and sliced hearts of palm, 2 chopped green onions, 2 tablespoons olive oil, and a pinch of sugar; season with salt to taste. Sprinkle with finely chopped parsley.
