Broccoli and Cheddar Breakfast Pizza

Ingredients:

  • 6 thick slices of bacon
  • 450 g ready-made pizza dough, room temperature
  • 1 package (280 g) frozen broccoli
  • 3 tbsp. grated sharp yellow cheddar (about 300 g)
  • 6 large eggs
  • Premium flour for working with dough
  • Crushed red pepper flakes or hot sauce, for serving

Preparation:

  1. Thirty minutes before you plan to bake your pizza, position the oven rack on the lowest shelf and place the pizza stone on it. Preheat the oven to 260°C.
  2. In a large skillet over medium heat, cook the bacon, turning as needed, until crisp, about 10 minutes. Transfer the bacon to a paper towel-lined plate. Let cool, then crumble and set aside. Retain the rendered fat in the skillet.
  3. Meanwhile, place the broccoli in a sieve or colander and rinse with cold water to defrost. Place the colander over a bowl to drain excess water. Transfer the broccoli to a medium bowl, drizzle with 2 tablespoons of the rendered fat, season with salt and pepper, and toss to coat evenly. Set aside.
  4. Lightly flour your work surface. Line a pizza peel or the back of a baking sheet with parchment paper. Divide the dough in half and cover one half with a towel. Place the other half over your fist and gently pull, twisting to allow the edges to stretch under their own weight, until you have a round dough about 0.5 cm thick and 30 cm in diameter.
  5. Place the dough on parchment paper and sprinkle with 1 cup of cheddar, then sprinkle with half of the broccoli, leaving a 2 cm border. Transfer the parchment paper to a hot pizza stone and bake for 5 minutes.
  6. Crack 1 egg into each of three small bowls. After the pizza has baked for 5 minutes, flip it over and place the eggs on top, distributing them evenly.
  7. Sprinkle with 1/2 cup of the remaining cheese and half of the bacon. Bake until the pizza is golden brown and crispy on the bottom, the egg whites are set, and the yolks are still runny, about 5 minutes.
  8. Transfer the pizza to a cutting board and let it rest for 2 minutes to allow the eggs to set. Repeat with the other half of the dough and the remaining ingredients. Slice and serve with crushed red pepper flakes or hot sauce.
