Sloppy Joe sandwich with Korean-style quick pickles

Ingredients:

    Korean-Style Sloppy Joe Sandwich

  • 450 g of ground beef
  • 220 g of minced pork
  • 1 Asian pear or Bosc pear
  • 1 onion, red or yellow
  • 4 cloves of garlic
  • 2.5 cm ginger root
  • Neutral vegetable oil, such as peanut or safflower
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1/3 cup Korean gochujang paste
  • 1 cup beef or chicken broth
  • 1 tbsp light brown sugar
  • 1 tbsp dark sesame oil
  • 4-6 soft hamburger buns
  • 4 green onions, chopped
  • 2 green chilies, fresh fingerling peppers or jalapeños, or pickled jalapeños

    Quick pickled cucumbers

  • 1 large cucumber or 4 small ones
  • Approximately 1/4 tbsp. rice vinegar
  • 2 tbsp. ultrafine sugar
  • 1 tbsp Korean chili powder or chili paste
  • 1.5 tsp salt
  • 1 tsp. dark sesame oil
  • 1 teaspoon toasted sesame seeds

Preparation:

  1. Quick pickled cucumbers:

    Slice the cucumber into 0.5-0.3 cm thick slices. In a bowl, combine the rice vinegar, sugar, chili flakes, salt, and sesame oil. Add the sliced ​​cucumbers and toss to combine.
  2. Korean-Style Sloppy Joe Sandwich:

    Peel and grate the pear on a coarse grater. Peel and chop the onion, and chop or grate the garlic and ginger.
  3. Heat a frying pan over medium-high heat. Add oil, turning the pan twice, then add the ground meat, browning and crumbling it. Season with salt and pepper to taste. Add the pear, onion, garlic, and ginger and stir for a couple of minutes to soften. Add the soy sauce, Worcestershire sauce, chili paste, broth, sugar, and sesame oil. Bring to a boil and reduce heat. Simmer for 10-15 minutes.
  4. Serve the meat sauce on buns with green onions, fresh or pickled chilies, and quick pickles.
