Ingredients:
- 3 tbsp. l. powdered gelatin
- 3/4 cup ultrafine or light brown sugar
- 10 large lemons
- 2 tbsp. cranberry juice cocktail
- 1 cup of vodka or water
Preparation:
- In a small saucepan, bring 0.5 cups of water to a boil over medium-high heat. Remove from heat and add the gelatin. Stir until completely dissolved. Add the sugar and stir until completely dissolved. Let sit for 5 minutes.
- Meanwhile, cut each lemon in half lengthwise. Carefully scoop the pulp out of the rind and transfer it to a small bowl, being careful not to damage the rind; set the rinds aside. Mash the pulp to release the lemon juice. Strain through a fine sieve. You'll need 1 cup of freshly squeezed juice. Discard the pulp.
- Combine lemon juice, cranberry juice, and gelatin mixture in a large pitcher. Add vodka.
- Place the lemon peel halves on a rimmed baking sheet and pour the gelatin mixture into each half. Refrigerate until completely set (the jelly should not stick to your finger when touched), about 8 hours or overnight.
- To serve, cut each lemon half into 3 wedges.
