Ingredients:
- 2 racks pork spare ribs (about 1.3 kg)
- Olive oil
- 2 slices of bacon
- 4 sprigs of fresh thyme
- Half an onion
- 3 crushed garlic cloves
- 2 tbsp. ketchup
- 1 cup peach jam
- 2 tablespoons Dijon mustard or 1 tablespoon dry mustard
- 2 tbsp. l. brown sugar
- 1/4 cup molasses
- 2 tablespoons red or white wine vinegar
- 1 tsp ground cumin
- 1 teaspoon ground paprika
- Additional equipmentkitchen string
Preparation:
- Preheat oven to 120°C, place ribs on a baking sheet, season with salt, pepper and drizzle with olive oil.
- Place them in the oven and bake for 1 hour 30 minutes.

Wrap the bacon around the center of the thyme sprigs and tie with kitchen twine to form a bundle. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the thyme bunch and cook for 3-4 minutes, until the bacon fat renders, imparting a pleasant smoky flavor to the sauce.
- Add the onion and garlic and sauté for 5 minutes, preventing them from browning. Add the remaining sauce ingredients, stir, and reduce the heat to low. Cook at a low simmer for 20 minutes to allow the flavors to meld.
- Place a small amount of sauce in a separate bowl for brushing the ribs, reserving the remaining sauce for serving. Brush the ribs with the sauce and continue baking, brushing them twice, for another 30 minutes. When the ribs are done, remove them from the oven. Set them aside until ready to serve.
- When ready to serve, preheat the oven to broil for 5 minutes and grill the ribs, brushing them with the sauce. They should be crispy on top and browned, about 5 minutes per side. Remove the onion and garlic from the sauce and serve with the ribs.
