Ingredients:
Ribs
- 2.3 kg of meaty pork ribs
- 2 cups soy sauce
- 0.5 cups tightly packed light brown sugar
- 1 tbsp dark molasses
- 1 teaspoon of salt
Barbecue sauce
- 1 bottle (400 gr.) ketchup
- 1 bottle (340 g) of chili sauce
- 0.5 cups tightly packed light brown sugar
- 1 teaspoon dry mustard
Preparation:
- In a medium saucepan, combine soy sauce, brown sugar, molasses, salt, and 1 cup water. Bring to a boil and let cool to room temperature.
- Place the ribs in a large baking bag or a zip-lock plastic bag. Place the bag in a 12 x 14-inch baking dish. Pour the marinade over the ribs and seal the bag. Marinate in the refrigerator for several hours, turning the bag occasionally to thoroughly coat the ribs with the sauce.
- Preheat the oven to 375°F (190°C). Drain the ribs from the marinade. Make four slits in the top of a baking bag, if using one. If using a zip-lock bag, remove the ribs, transfer them to a baking sheet, and cover the baking sheet with foil or a lid. Bake for 2 hours.
Sweet and Spicy BBQ Glaze While the ribs are baking, combine the ketchup, chili sauce, brown sugar, dry mustard, and 1/3 cup water in a large saucepan. Bring the mixture to a boil, stirring to dissolve the sugar, then remove from heat.
- When the ribs are tender, remove them from the baking bag. Reduce the oven temperature to 175°C.
- Brush the ribs with the barbecue glaze on both sides and return them to the oven. Bake, uncovered, for another 30 minutes. Just before serving, place the ribs under the oven's broiler and lightly grill them.
