Refreshing raspberry and lime punch topcook.tomathouse.com
Ingredients:
- 1 bottle (750 ml) Lille
- 1 cup frozen raspberries + extra for serving
- 0.5 cup fresh mint leaves + extra for serving
- 1 tbsp. granulated sugar
- 3/4 cup white rum
- 1 tbsp freshly squeezed lime juice
- Ice
- 1 cup seltzer water
Preparation:
- Using a masher or muddler, mash the raspberries with the mint and sugar in a large bowl until the raspberries are very finely chopped. Add the rum, lime juice, and Lillet and stir. Cover and refrigerate for 1-4 hours.
- Strain the cocktail into a large pitcher filled with ice. Add some raspberries and mint for serving, and top with seltzer water. Serve immediately.
- To serve individual cocktails, prepare the punch without the seltzer and pour it into 6-8 glasses filled with ice. Top each glass with seltzer and serve immediately.
