Refreshing raspberry and lime punch

Ingredients:

  • 1 bottle (750 ml) Lille
  • 1 cup frozen raspberries + extra for serving
  • 0.5 cup fresh mint leaves + extra for serving
  • 1 tbsp. granulated sugar
  • 3/4 cup white rum
  • 1 tbsp freshly squeezed lime juice
  • Ice
  • 1 cup seltzer water

Preparation:

  1. Using a masher or muddler, mash the raspberries with the mint and sugar in a large bowl until the raspberries are very finely chopped. Add the rum, lime juice, and Lillet and stir. Cover and refrigerate for 1-4 hours.
  2. Strain the cocktail into a large pitcher filled with ice. Add some raspberries and mint for serving, and top with seltzer water. Serve immediately.
  3. To serve individual cocktails, prepare the punch without the seltzer and pour it into 6-8 glasses filled with ice. Top each glass with seltzer and serve immediately.
